Butternut squash soup with Maker's Mark crème fraiche

Add the butter, garlic and shallots to a large pot over a medium heat

Sweat until translucent, then add the butternut squash, and half the Bourbon. Cook until the liquid has almost evaporated, then add the water and bouquet garni.

Bring to a simmer for 20 minutes until the butternut squash is soft and then and the nutmeg as well as salt & pepper to taste

Blend until smooth, and serve with a blob of creme fraiche mixed with some more Maker's Mark
