Melt the butter in a saucepan, add the flour, and cook over gente heat for 1 minute.

Add the beef stock, Guinness, tomato purée, jelly, and herbs. Bring to a boil.

Reduce the heat and allow to simmer for 2-3 minutes, or until you have a rich, textured gravy. Keep hot.

Cook sausages for 10-15 minutes, or until golden brown, under a preheated medium grill. Turn sausages frequently, brushing with honey.

Serve with creamy mash or bubble and squeak.
