Method

1

Preheat oven to 180°C (160ºC fan). Grease a 23 x 33cm baking pan with cooking spray. In a medium bowl, whisk together flour, cocoa powder, and salt.

2

Set a large heat-proof bowl over a saucepan of simmering water to create a double-boiler, making sure the bottom of the bowl doesn’t touch the water. Add butter and chocolate chips to bowl and stir until melted. Remove from heat. Alternatively, place chocolate chips and butter in a microwave safe bowl and heat in 30 second intervals until melted.

3

Add sugars to melted chocolate and whisk until incorporated. Add eggs, one at a time, whisking well after each addition. Add vinegar, food colouring, and vanilla and whisk until incorporated. Add dry ingredients to chocolate mixture and stir until just combined.

4

Pour brownie batter into prepared pan and bake until a toothpick inserted in middle comes out with a few moist crumbs, about 28 minutes. Let cool completely.

5

Make truffle layer: In a food processor, pulse Oreos into fine crumbs. Pour crumbs into a large bowl and add cream cheese and mix until mixture comes together and no chunks of cream cheese remain.

6

Make frosting: In a large bowl, beat cream cheese and butter until smooth. Add powdered sugar and beat until no lumps remain. Add double cream and vanilla and beat until combined. Fold in crushed Oreos.

7

Spread truffle mixture over cooled brownies into an even layer, then spread frosting over truffle layer. Top with mini chocolate chips.
