In a meat tray, combine the oil, lemon zest and juice, gin and tonic water.

Place the pork chops in the meat tray, cover with the marinade and refrigerate for 20-30 minutes.

Remove the chops from the fridge and season with salt and pepper.

In a pan over moderate heat, fry the chops for 8 minutes each side.

For the dressing, mix the oil, lime zest and juice, maple syrup, salt, pepper and chilli.
