A quick and simple chicken fried rice recipe- makes a great 'fakeaway'!

- 800 g Tilda Basmati Rice (cooked and cooled)
- 2 Tbs Sesame oil
- 250 Chicken breasts (skinless and diced into 1/2 inch pieces)
- 200 g Frozen peas and diced carrot blend (if using fresh just cook for a little longer)
- 3 Spring onions (sliced)
- 3 Garlic cloves (finely minced)
- 3 large Eggs (lightly beaten)
- 4 Tbs Soy sauce
- Salt & Pepper to taste
- 2 Tbs Vegetable oil
