Coca Cola glazed salmon

Surprisingly simple, this dish is a real winner with all the family, with it's sweet sour flavour, served best with rice and fresh vegetables

Combine the coke, balsamic vinegar and salt in a saucepan over medium-high heat and reduce by half. (about 20 minutes)

Heat olive oil in a non-stick frying pan over a medium heat. Place the fillets, skin-side down into the pan, and season.

Sauté until the skin is crispy, about 5-7 minutes. Flip over and cook until fish is opaque, but still tender, about 5 additional minutes

Serve fillets with mixed vegetables & drizzled with glaze.

Or break up the salmon and serve with noodles and chopped spring onion.
