Coca Cola Cupcakes

Put some fizz into your cupcakes! These little miracles will delight kids and adults too. The Coca Cola makes the cake light and airy.

Preheat the oven to 200C and line a cupcake tin with paper cases

In a saucepan, gently heat the butter and Coca Cola until the butter has melted - then leave to cool

Sift the flour, baking powder and cocoa together in a bowl and then add the cooled Coke and butter mix, followed by the sugar, eggs and milk.

Mix together until smooth

Divide the mixture between the cases and bake for 25-30 mins

Leave to cool in the tin for 5 minutes and then transfer to a wire rack and allow to cool completely before frosting

To make the Cola frosting, cream the butter in a bowl.

Sift the cocoa powder and icing sugar together and mix a little at a time into the butter, alternating with additions of the Coca cola.

Beat to give a nice smooth frosting, and then beat in the vanilla extract.

Pipe the frosting onto the cooled cupcakes and decorate with popping candy and fizzy cola bottles
