Chicken with Guinness and Lime

Guinness and lime make a great marinade for chicken in this favourite family dish. It would work equally well with pork.

Put all ingredients, except the whole lime, chicken, salt, and pepper in a saucepan and bring to a boil, stirring well.

Reduce the heat and simmer for 10 minutes until reduced by half. Leave to cool and remove the star anise and reserve for garnish, if liked.

Score the chicken quarters and season generously with salt and pepper. Place the chicken in a shallow dish, and pour the cooled sauce on the chicken until completely coated.

Cover the chicken and leave to marinate in the refrigerator for at least 2 hours or overnight.

Line a grill pan with foil, and lay the chicken in the pan, spooning over the marinade.

Cook the chicken under a preheated low to medium grill, turning and basting with the marinade halfway through cooking. Grill chicken for 35-40 minutes, or until chicken skin is charred and the juices run clear.

While chicken is cooking, cut the whole lime into quarters. Add the lime wedges to the pan about 25-30 minutes through the cooking time.

Serve chicken with the pan juices, lime wedges, the reserved star anise and salad, if liked.
